Use the leaves which contain essential oils when braised, a distinctive smell is emitted, like that of a faint odour of anise. Use in curries & stews.

Growing Curry Leaf Tree

a small deciduous tree which has hard, useful wood. The leaves are pinnate, with 15-19 leaflets and it is the individual leaflets which are used in cooking. The plant likes hot conditions and plenty water and should be grown where it recieves good sun but where it is protected from frost. While small take indoors during winter or protect extensively with a hessian wrap.
